Exactly as in the previous vintage the proportion of Cabernet Sauvignon is undeniably pertinent to 2016 blend, because of its ability to demonstrate its amazing characteristics in warmer vintages.
The fragrance is embracing and strong and has a juicy and sophisticated palate with flavours of Mediterranean bushes and berries. It has a well balanced high level of flavour concentration in addition to an charming acidity.
This wine has a long finish but superior tannins which evolves within the glass.

The white soil in these vineyards is rich in limestone, firm clay and stones.
The 2016 vintage was substantial and well balanced in general. Great structure, deep colour, fruity and flowery aromas and flavours was provided by long and steady natural fermentation.
Both 2016 winter and spring were characterised by ample and frequent rainfalls which created the ideal water supply for the entire growing season.
The rainy spring helped the vines during a dry summer which improved the elegance of Cabernet Franc and Cabernet Sauvignon grapes and produced truly healthy grapes.
The summer was mainly warm and dry, but strong day time temperature exchanges during the ripening period with picks of 12-15°C were advantageous.
The two types, i.e. Cabernet Sauvignon and Cabernet Franc, are fermented and macerated individually for approximately 15 days. After one year of ageing in oak and further 6 months in concrete vessels, they are blended and aged for quite a few months in the bottle before being released.
